History of Mac n' Cheese
Macaroni and cheese also called Mac n' Cheese in United States and macaroni cheese in the United Kingdom. Mac & Cheese is a dish of cooked macaroni pasta and a cheese sauce, most commonly cheddar. It can also incorporate other ingredients, such as breadcrumbs and meat or vegetables.
Food historians can trace the beginnings of macaroni and cheese back to thirteenth century Italy. In a text called the Liber de Coquina, we find the earliest written recipe for mac n cheese, written in Latin. The recipe called for macaroni pasta to be cooked in water and tossed with grated cheese
According to some American stories, Thomas Jefferson fell in love with mac n cheese while visiting Italy. This dish used Parmesan cheese. When he returned to the United States, he still craved the dish. When his wife died and his daughter, Mary Randolph, took over as the hostess of his household, she had a pasta machine imported from Italy and began making mac n cheese for her father and his dinner guests, but she replaced the Parmesan cheese with cheddar cheese, making it more like today’s Mac n Cheese.
Ingredients
400 g elbow macaroni
5 tablespoons butter
5 tablespoons flour
1 cups heavy cream
2 ½ cups milk
½ teaspoon salt
¼ teaspoon onion powder,
¼ teaspoon white pepper
3 cups shredded cheddar cheese
1 cups shredded fresh mozzarella
Instructions
Preheat oven to 325 degrees.
Bring a large pot of water to a boil. Add salt. Cook the macaroni according to the packet instructions when it comes to time, making sure the pasta is al dente. Now Drain pasta and set aside. .
For the Cheese Sauce: Melt butter in a large pot over medium heat. Use a silicone spatula to stir in the flour. Continue to stir for 2 minutes; it should start to turn a light brown. Add the heavy cream/milk in small splashes, stirring continuously. (If you add it too quickly you’ll “break” the roux and the sauce will be thin.)
Add salt, pepper & onion powder, Stir continuously for few minutes.
Check the consistency of sauce & turn off the heat.
(Mix together both shredded cheeses) Gradually sprinkle in 3 cups of shredded cheese. Stir continuously until smooth and combined. If it seems too thick, add a splash of warm milk.
Now add macaroni and stir to combine.
Transfer to a lightly greased 9 x 13-inch casserole dish. Top with remaining 1 cups of cheese.
Bake until browns the top approx. 20 minutes.
Serve hot
