Chilly Garlic Prawns
Chinese chili garlic prawns is a recipe you’ve simply got to try, It’s incredibly easy to make. The sauce is perfectly spicy and garlicky with just the right amount of sweetness. You can Serve as an appetizer or as a light lunch over rice, or with a side of steamed veggies.
500g Medium size prawns Cleaned
3 tablespoons vegetable oil
1 teaspoon finely chopped ginger
2 teaspoons finely chopped garlic
1 stalk finely chopped spring onion
3 stalk cilantro chopped
1 tablespoon Shaoxing wine (Chinese rice wine)
¼ cup water
For sauce
2 tablespoons Tomato ketchup
2 tablespoons Hot Garlic Sauce
Salt to taste
¼ teaspoon freshly ground blackpepper
¼ teaspoon sesame oil
INSTRUCTIONS
Pour all the sauce ingredients in a medium bowl mix well and keep aside.
Rinse the shrimp under running water and pat dry with a paper towel.
Heat the oil in a wok until smoking hot. Fry the shrimp on both sides for 1 minute. Transfer in to the plate, and keep aside.
Turn the heat to medium-low, and leave the remainder of the oil in the wok.
Add the ginger and infuse for 15 seconds and add the garlic and shallot. Once caramelized (about 1 minute), add the sauce mixture and continue to stir and fry for another minute until incorporated. Add the chopped cilantro and then the Shaoxing wine.
Increase the heat to medium-high, and add the water to thin the sauce. Bring everything to a simmer.
Once the sauce is simmering, add the shrimp and any juices that may have collected on the plate. Toss the shrimp until they are completely coated in sauce. Serve, topped with chopped cilantro leaves.
