Herb Crusted Lamb chop

Ingredients:

  • Lamb Chops 
  • salt, to taste
  • Freshly Grounded Black pepper, to taste
  • 3 tsp olive oil,
  • 2 cloves garlic, peeled and smashed
  • 4 tbsp Breadcrumb
  • 5-7 gm fresh Italian parsley
  • 1 tsp fresh rosemary
  • ¼ cup grated parmesan cheese(55 g)
  • ½ tablespoons whole
    grain dijon mustard


Instruction:

  • Preheat oven to 200°C

For the herb crust

  • Put the breadcrumbs, parsley, rosemary, parmesan, 1tsp olive oil, some salt, and pepper into a food processor and pulse for 10-15 seconds, until all the ingredients mix. Transfer in to the flat plate and keep aside.

For Lamb Chops

  • Season lamb generously with salt and pepper.
  • Heat a iron skillet over medium high heat.
  • To the hot pan, add in 2 tsp of the olive oil, along with the lamb and garlic. Sear all sides of the lamb until browned, about 3-4 minutes. Remove browned lamb, and place cooked lamb into a baking sheet.
  • Coat each lamb chop with Dijon mustard, using a silicone brush.
  • Coat the top and sides of the lamb with the herbed crust and roast in oven for around 25 minutes.
  • you can Serve with mashed potato and buttered veggies.
