Gundruk Bhatmas Sandheko Recipe
(Fermented Green Vegetable leaves and Roasted Soybean)
Ingredients
- 1 bowl Gundruk
- 5 cloves Garlic juliened
- 1 small size Ginger Julienned
- 1 tsp roasted cumin Powder
- ½ tsp Timur powder (Szechuan pepper powder)
- ½ tsp Turmeric powder
- 5-6 tsp Dry red chilies roasted and crushed
- 2 green chilies (chopped)
- Salt to taste
- 2 tbs Roasted mustard oil
- 2 medium sized Tomato char gilled and Mashed
- 150gms roasted soyabean
- Lime juice as required
- Coriander Leaf freshly chopped 2 tsp
Soak the Gundruk in warm water for around 15 minutes or more. Shred gundruk into small bite-size pieces, squeeze out water from Gundruk using your hand, and transfer into a large Bowl. Mix all the ingredients gently and mix well with your hand and some water from the soaked Gundruk to give a sour and fermented flavor drawn in the water. Your gundruk ko achar is now ready to eat. You can store it in the freezer for 2 days at the right temperature.
