Gundruk Bhatmas Sandheko Recipe

(Fermented Green Vegetable leaves and Roasted Soybean)

Ingredients
  • 1 bowl Gundruk
  • 5 cloves Garlic juliened
  • 1 small size Ginger Julienned
  • 1 tsp roasted cumin Powder
  • ½ tsp Timur powder (Szechuan pepper powder)
  • ½ tsp Turmeric powder
  • 5-6 tsp Dry red chilies roasted and crushed
  • 2 green chilies (chopped)
  • Salt to taste
  • 2 tbs Roasted mustard oil
  • 2 medium sized Tomato char gilled and Mashed
  • 150gms roasted soyabean
  • Lime juice as required
  • Coriander Leaf freshly chopped 2 tsp
Method
Soak the Gundruk in warm water for around 15 minutes or more. Shred gundruk into small bite-size pieces, squeeze out water from Gundruk using your hand, and transfer into a large Bowl. Mix all the ingredients gently and mix well with your hand and some water from the soaked Gundruk to give a sour and fermented flavor drawn in the water. Your gundruk ko achar is now ready to eat. You can store it in the freezer for 2 days at the right temperature.
